Shrimp And Oyster Gumbo

Ingredientes

  • 4 Tbsp. Butter
  • 1/2 lb (250 g) fresh okra, thinly sliced, or possibly 1 10 ounce. (280 g) package of frzn okra, thawed and thinly sliced
  • 1/2 c. Finely minced onions
  • 1/2 c. Finely minced green pepper
  • 1 tsp Finely minced garlic
  • 1 Tbsp. Flour
  • 4 c. Chicken stock, (fresh or possibly canned)
  • 3 med Sized ripe tomatoes, cored and coarsely minced
  • 6 x Fresh parsley sprigs and one large bay leaf, tied in a bundle with twine
  • 1/2 tsp Dry thyme
  • 2 tsp Salt
  •     Freshly grnd black pepper, (to taste)
  • 1 lb (450 g) small raw shrimp, peeled and deveined
  • 12 x Shucked oysters, (up to 18)
  • 1 tsp Strained lemon juice
  • 1 tsp Worcestershire sauce
  • 1/4 tsp Cayenne, (or possibly to taste)

Direcciones

  1. Heat half the butter in a heavy skillet over moderate heat and add in the sliced okra, stirring till the white "strings" produced by the okra disappear. Set aside. Heat the remaining butter in a 2 to 3 quart. (2 to 3 l)
  2. soup pot over moderate heat. Add in the onions, green pepper and garlic and cook for about 5 min. Add in the flour and continue to cook for 2 to 3 min, stirring constantly. Pour in the chicken stock and stir using a wire whisk. Then add in the okra, tomatoes, parsley bundle, salt, and black pepper. Bring to a boil, reduce the heat, and simmer partially covered for 30 min. Just prior to serving, add in the shrimp and simmer for 5 min, then add in the oysters and simmer for 2 to 3 min or possibly till the oysters become plump and the edges begin to curl. Don't overcook the oysters. Stir in the lemon juice, Worcestershire sauce, and cayenne. Remove and throw away the parsley bundle.
