Shrimp And Scallop Scampi Over Linguini

Ingredientes

  • 2 lbs. fresh, peeled and deveined, cooked shrimp
  • 1 1/2 lbs. sm. bay scallops
  • 2 lbs. linguini pasta, cooked and liquid removed
  • 8 tbsp. butter
  • 1 med. onion, minced
  • 1 tbsp. chopped garlic
  • 1 teaspoon minced parsley
  • 1 teaspoon crushed red pepper (more or less to taste)
  • Grated Parmesan or possibly Romano cheese

Direcciones

  1. Cook and drain linguini. Keep hot.
  2. Heat butter in large no-stick fry or saucepan.
  3. Add in onion, saute/fry for about 3 min.
  4. Add in garlic, parsley and crushed red pepper, stir.
  5. Add in scallops, stirring constantly for 3 min until scallops are done (will turn from opaque to white).
  6. Mix in shrimp to heat through.
  7. Toss with pasta.
  8. Garnish with extra parsley.
