Shrimp Ceviche
INGREDIENTS:
- 1 pound cooked shrimp, cut into bite sized pieces
- 1 cup seedless cucumber, cut into small dice
- 1 avocado, cut into small dice
- 4 scallions, sliced thin
- 1/3 cup cilantro-chopped
- 1/2 cup chili sauce
- 1 lime-juiced
- 1 lemon-juiced
- 3 tablespoons olive oil
- Salt and pepper, to taste
DIRECTIONS:
Place all ingredients in a mixing bowl and stir to combine. Serve with fresh tortilla chips, on a French baguette or rolled in a lettuce leaf.
