Ingredientes

  • 1/2 pound shrimp (diced and marinate for 20 minutes.)
  • 8 Large eggs + 1/2 teaspoon salt (well beaten)
  • 1/2 pound bean sprouts
  • 1 sm. can sliced mushrooms
  • 7 water chestnuts
  • 1 slice ginger root
  • 14 tbsp. oil

Direcciones

  1. Heat 2 tbsp. oil (high). Brown ginger, throw away. Stir-fry bean sprouts with a sprinkle of salt for 1-2 min; remove.
  2. In a large bowl, combine shrimp, mushrooms, water chestnuts, bean sprouts and egg together.
  3. Separate mix into 3 batches. Heat 4 tbsp. oil (medium) each time. Fry it one at a time, when egg becomes solid and golden brown on both sides (like frying pancakes).
