Ingredientes

  • 2 x egg yolks
  • 1/2 c. lowfat milk
  • 1 1/2 c. sifted flour
  • 1 Tbsp. baking pwdr
  • 3/4 tsp salt
  • 1/4 tsp grnd white pepper
  • 2 tsp Worcestershire sauce
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp paprika
  • 2 Tbsp. minced parsley
  • 1/2 c. fresh white bread crumbs
  • 2 Tbsp. finely chopped onion (cooked)
  • 2 Tbsp. finely chopped green pepper (cooked)
  • 1 c. cooked, minced shrimp (cooled)
  • 2 x egg whites stiffly beaten
  • 1/4 c. creamed style corn (liquid removed)
  • 2 Tbsp. old bay seasoning, from Maryland. Can be found in more supermarkets.

Direcciones

  1. Beat the egg yolks till light: then add in the lowfat milk, sifted flour, baking pwdr, salt, white pepper and paprika. Mix with a few swift strokes. Mix in the remaining ingredients, taste for seasonings and adjust as you like.
  2. Chill the mix for 30 min, then deep fry by placing golfball size nuggets in 375 degree oil.
  3. Note: You may adjust the ingredients asyou like. If you do not like green peppers leave then out. If desired onions you may add in them in place of the peppers. Do not increase the volume of ingredients with out proportionately increasing the other ingredients, otherwise the fritters will fall apart when frying. To make clam fritters replace the shrimp with clams.
