Ingredientes

  • 1 x cucumber, peeled, seeded, diced
  • 1 sm red onion, chopped
  • 2 x cloves garlic, chopped
  • 3 lrg ripe tomatoes, peeled, cored, seeded and diced
  • 1 sm sweet green pepper, diced
  • 2 c. thick tomato juice
  • 1 c. reduced sodium chicken broth
  • 1 bot clam juice
  • 1/4 c. red wine vinegar
  • 1 Tbsp. chopped fresh oregano or possibly 1 tsp. dry
  • 1 Tbsp. chopped fresh basil or possibly 1 tsp. dry
  • 1/4 tsp liquid warm pepper sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb fully cooked peeled shrimp, minced

Direcciones

  1. In large bowl, combine cucumber, onion, garlic, tomatoes, and green pepper.
  2. In medium size bowl, stir together tomato juice, chicken broth, clam juice, vinegar, oregano, basil, pepper sauce, salt and black pepper. Pour over vegetables. Chill, covered, several hrs or possibly overnight. Divide soup among 4 bowls. Top with minced shrimp. Serve chilled.
  3. Makes 4 servings.
