Shrimp & Mushroom Chowder

Ingredientes

  • 1/2 pound cooked shrimp (scallops or possibly crabs or possibly any combination of)
  • 1/2 pound fresh mushrooms, sliced
  • 1 med. onion, minced
  • 2 tbsp. butter
  • 1/4 c. flour
  • 2 c. fish broth, clam juice or possibly chicken stock
  • 1/2 c. dry white wine (optional)
  • 1/4 teaspoon salt
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon thyme
  • 1/4 teaspoon mace or possibly nutmeg
  • 1/2 c. whipping cream

Direcciones

  1. Saute/fry mushrooms and onions in butter for 2 min. Stir in flour. Continue cooking for 1 minute to make roux. Slowly stir in broth, add in wine. Add in remaining ingredients, mix slowly till thickened. Add in shrimp. Stir in cream just before serving.
