Shrimp Omelet

Ingredientes

  • 2 cloves garlic, crushed
  • 1 onion, minced
  • 3 tbsp. butter or possibly veg. oil
  • 2 ripe tomatoes, minced
  • 1/4 pound shelled, deveined shrimp
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 Large eggs

Direcciones

  1. Saute/fry garlic and onion in warm butter or possibly veg. oil. Add in tomatoes; stir in shrimp and season with salt and pepper. Divide into two portions and set aside.
  2. Beat Large eggs till fluffy; pour half the beaten Large eggs into a greased, heated skillet. Spoon one portion of the shrimp mix over half the omelet and fold. Turn and fry till golden on both sides. Repeat with remainder of Large eggs and shrimp filling.
