Ingredientes

  • 1 Tbsp. extra virgin extra virgin olive oil
  • 4 ounce medium shrimp, peeled and quartered
  • 1 Tbsp. fresh garlic, minced
  • 1 c. button mushrooms, quartered
  • 1 Tbsp. fresh basil
  • 3/4 c. Marinara sauce (your choice)
  • 10 ounce linguine, cooked
  •     Parmesan cheese to garnish
  •     Minced parsley to garnish
  • 2 Tbsp. extra virgin extra virgin olive oil
  • 1 c. diced onion
  • 1/4 c. chopped garlic
  • 1/4 c. minced parsley
  • 2 Tbsp. fresh basil
  • 1 tsp oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp sugar
  • 2 x bay leaves
  • 6 c. diced tomatoes
  • 1 c. stock or possibly water

Direcciones

  1. Place the first five ingredients in a 10" skillet. Cook till the shrimp are about three quarters of the way done. Add in marinara sauce and bring to a boil. Pour the sauteed mix over the cooked linguine in a large serving bowl. Garnish with Parmesan cheese and parsley. If you like, this dish may be cooked without oil or possibly by using a light spray of extra virgin olive oil flavored Pam.
  2. Marinara Sauce:Saute/fry the onions and garlic in the extra virgin olive oil till the onions turn clear and the garlic releases its flavor. Add in the herbs and seasoning and mix well. Cook one minute. Add in the diced tomatoes and stock. Cook till thickened (about 45 min). The sauce should coat the back of a spoon.
