Shrimp & Scallops With Cheese Sauce

Ingredientes

  • 3 tbsp. butter
  • 3 tbsp. cornstarch
  • 3 c. lowfat milk
  • 12 ounce. Swiss Gruyere cheese, diced
  • 1/4 teaspoon garlic pwdr
  • Salt to taste
  • 1/4 teaspoon dry mustard
  • 2 teaspoon tomato paste
  • 3 teaspoon lemon juice
  • 1 pound scallops
  • 1/2 pound sliced mushrooms
  • 1 pound shrimp, cooked & cleaned
  • 2 tbsp. diced green pepper

Direcciones

  1. Heat butter in top of double boiler, add in cornstarch and stir to create a smooth paste. Slowly stir in lowfat milk, cook, stirring constantly, till it thickens and comes to a boil. Add in cheese and stir till melted. Add in next 6 ingredients, remove from heat.
  2. Poach scallops about 10 min in simmering water with 1 tsp. lemon juice and some salt. Remove scallops, add in 1/2 c. of this to cheese sauce, stir. Saute/fry mushrooms in butter and add in to sauce. Add in scallops and shrimp and heat. Garnish with green pepper and serve with rice. Serves 6 to 8.
