,%20but%20it%E2%80%99s%20never%20a%20good%20sign%20when%20the%20head%20instructor%20names%20your%20group%20the%20Rascals%2015%20minutes%20into%20class%20and%20the%20other%20students%20suddenly%20become%20very%20busy%20with%20zesting%20their%20lemons%20when%20we%20tried%20to%20be%20friendly%20(at%20least%20I%20think%20we%20tried.%20Maybe%20not%E2%80%A6).%3C/p%3E%3Cp%3EI%20blame%20the%20fact%20that%20all%20of%20us%20are%20complete%20Type%20A%20personalities,%20the%20class%20was%20on%20a%20Monday%20evening%20after%20a%20weekend%20of%20various%20ups%20and%20downs%20for%20all%20of%20us,%20we%20were%20having%20a%20heated%E2%80%94and%20not%20so%20subtle%E2%80%94debate%20on%20the%20hotness%20of%20the%20two%20instructors%20(cleverly%20named%20Mean%20Hot%20Chef%20and%20Nice%20Hot%20Chef),%20and%20the%20fact%20that%20the%20class%20was%20called%20%E2%80%9CSeal%20the%20Deal,%E2%80%9D%20in%20anticipation%20of%20Valentine%E2%80%99s%20Day,%20on%20why%20we%20probably%20aren%E2%80%99t%20going%20to%20be%20named%20Teacher%E2%80%99s%20Pets%20any%20time%20soon.%20%20I%20mean,%20we%20followed%20instructions%20for%20the%20most%20part%20(except%20that%20whole%20adding%20salt%20before%20we%20were%20supposed%20to%20when%20it%20came%20to%20the%20red%20wine%20reduction%20sauce.%20%20Luckily%20Mean%20Hot%20Chef%20caught%20us%20in%20time)%20and%20we%20didn%E2%80%99t%20set%20ourselves%20or%20anything%20on%20fire,%20and%20our%20final%20dish%20looked%20like%20everyone%20else%E2%80%99s.%20%20But,%20I%20can%20kind%20of%20see%20how%20the%20wine%20drinking%20and%20the%20picture%20taking%20(I%E2%80%99m%20the%20guilty%20party%20on%20this%20one)%20and%20the%20endless%20questioning%20(%E2%80%9CHow%20long%20do%20you%20grill%20the%20radicchio?%E2%80%9D%20%E2%80%9CI%20really%20don%E2%80%99t%20like%20giving%20specific%20grilling%20times,%20since%20each%20grill%20is%20different.%E2%80%9D%20%E2%80%9COh.%20Ok,%20that%20makes%20sense.%20But%20if%20you%20had%20to%20give%20a%20specific%20time,%20what%20would%20it%20be?%E2%80%9D%20[Insert%20sigh%20and%20eye%20roll%20here])%20could%20turn%20a%20peaceful%20class%20into%20the%20kind%20of%20thing%20that%20makes%20instructors%20wonder%20what%20they%20did%20in%20a%20past%20life%20to%20deserve%20this%20fresh%20hell.%3C/p%3E%3Cp%3EOur%20menu,%20which%20was%20shrimp%20scampi%20(side%20note%20here:%20we%20learned%20that%20Scampi%20means%20shrimp,%20so%20basically%20the%20dish%20is%20called%20shrimp%20shrimp%20and%20that%20made%20us%20ridiculously%20happy.%20%20It%20doesn%E2%80%99t%20take%20much.),%20grilled%20radicchio%20with%20balsamic%20glaze,%20slow%20roasted%20beef%20tenderloin%20with%20herb%20roasted%20potatoes%20and%20red%20wine%20reduction%20and%20a%20flourless%20chocolate%20cake%20with%20bourbon%20caramel%20sauce,%20was%20actually%20pretty%20easy%20but%20looked%20very%20impressive,%20and%20took,%20from%20start%20to%20finish%202%20hours%20(that%20includes%20us%20playing%20around%20and%20posing%20for%20pictures%20with%20sharp%20knives.%20%20Dear%20lord,%20what%20would%20our%20mothers%20say?!).%3C/p%3E%3Cp%3EI%20wish%20I%20could%20tell%20you%20some%20tricks%20that%20we%20learned%20along%20the%20way,%20but%20I%20fully%20admit%20that%20this%20class%20was%20more%20about%20spending%20time%20with%20my%20friends%20than%20actually%20learning%20to%20cook.%20%20But%20in%20the%20end,%20isn%E2%80%99t%20that%20what%20it%E2%80%99s%20all%20about?%20%20I%20mean,%20the%20point%20of%20learning%20to%20cook%20is%20so%20you%E2%80%99ll%20be%20able%20to%20share%20a%20meal%20with%20people%20you%20love,%20right?%20%20Well,%20that%20and%20hanging%20out%20with%20hot%20chefs.%20%20That%20last%20part%20can%20take%20you%20pretty%20far%E2%80%A6%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20250%20degrees%3C/p%3E%3Cp%3EHeat%20a%20large%20saut%C3%A9%20pan%20over%20medium%20heat%20and%20add%20the%20grapeseed%20oil.%20%20Season%20the%20beef%20with%20the%20rub%20or%20salt%20blend.%20%20Sear%20the%20beef%20on%20all%20sides%20until%20well%20caramelized.%20%20Transfer%20the%20beef%20to%20a%20roasting%20rack%20set%20in%20a%20roasting%20pan.%3C/p%3E%3Cp%3ERoast%20the%20beef%20until%20done%20to%20your%20liking.%20%20An%20internal%20temperature%20of%20125%20degrees%20will%20produce%20the%20best%20results.%3C/p%3E%3Cp%3EWhile%20the%20beef%20roasts%20prepare%20the%20red%20wine%20reduction.%3C/p%3E%3Cp%3EHeat%20the%20same%20pan%20the%20beef%20was%20seared%20in%20over%20medium%20heat%20and%20add%20the%20butter.%20%20Add%20the%20shallots%20and%20gently%20saut%C3%A9%20until%20lightly%20caramelized,%20about%201%20minute.%20Deglaze%20the%20pan%20with%20red%20wine,%20scraping%20free%20any%20bits%20from%20the%20bottom%20of%20the%20pan.%20%20Simmer%20until%20the%20wine%20has%20reduced%20to%20about%20%C2%BC%20cup.%20%20Whisk%20in%20the%20beef%20stock,%20mustard,%20thyme%20and%20bay%20leaf%20and%20simmer%20until%20reduced%20by%20half%20of%20its%20original%20volume.%3C/p%3E%3Cp%3ERemove%20the%20sauce%20from%20the%20heat%20and%20whisk%20in%20the%20cold%20butte,%20followed%20by%20the%20parsley.%20%20Season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EOnce%20beef%20is%20done,%20allow%20it%20to%20rest%20for%20about%2010%20minutes.%20%20Cut%20into%20%C2%BD%20inch%20slices%20against%20the%20grain%20and%20serve%20with%20red%20wine%20reduction.%3C/p%3E){kind=link}
