This light and healthy dinner is easy and quick to make, even midweek! Top the lemon garlic shrimp with whatever you like. I often use shredded cabbage and homemade guacamole but mango, pineapple, or corn salsa would be tasty, too!

Ingredientes
30 large raw shrimp (shells removed)
Juice and zest of one large lemon
3 garlic cloves, minced
2 T olive oil
1.5 tsp honey (optional)
1/4 tsp salt
1/4 tsp ground pepper
4 tortillas (corn or flour) or taco shells
Direcciones
If using frozen shrimp, defrost them in a bowl of cold water
Whisk together the lemon juice and zest, garlic, oil, honey, salt and pepper and place in a Ziploc bag
Remove shrimp tails and slice shrimp in half lengthwise
Place shrimp in Ziploc and allow to soak in marinade for 5 minutes
Preheat a pan on medium-high heat
Remove shrimp from marinade and saute until cooked through (approximately 1.5 minutes)
Serve shrimp and with whatever taco fixings you like in individual bowls and allow each person to design their own tacos
