Ingredientes

  • 2 pkt ready-washed spinach leaves
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. chopped garlic
  • 1/2 c. sun-dry tomatoes
  • 3 Tbsp. capers
  • 1 Tbsp. lime juice
  • 1/2 tsp brown sugar
  • 1/2 tsp oregano
  • 1/2 c. Parmesan cheese
  •     salt and pepper to taste

Direcciones

  1. In large pot of boiling water, cook spinach till the leaves wilt but are still bright green. Transfer spinach to a colander or possibly perforated pan to release excess liquid.
  2. In medium skillet, heat oil. Add in garlic, then sun-dry tomatoes. Stir till heated through. Add in capers, lime juice, brown sugar and oregano and heat through.
  3. Fold in spinach, then cheese. Toss about 1 minute, till well combined. Add in salt and pepper to taste.
  4. Makes 4 servings.
