Receta Simple Meat Loaf, the update and a gadget
Are you a meat loaf lover?
Mon mari would happily eat it every day.
Some people get excited about steak or lobster…. For him it’s meat loaf.
I’m not sure which he likes best: the hot meat loaf the night I make it or the meat loaf sandwiches the next day.
I’m rather fond of a meat loaf, pickle and ketchup sandwich myself….
This one is simple – it just has chopped carrots and celery in it.
Some day, just to be different, I might try making a traditional meat loaf.
Simple Meat Loaf
Total time: 80 minutes
Ingredients:
- 14oz (420gr) ground beef
- 5oz (150gr) pork sausage
- 1 medium onion, finely chopped
- 1 small carrot, finely chopped
- 1 rib celery, finely chopped
- 2 cloves garlic, finely chopped
- 1 tbs olive oil
- 2 eggs
- 1/2 cup bread crumbs
- 1/4 cup (2oz, 60ml) red wine or beef stock
- 1/4 cup (2oz, 60ml) ketchup
- 1 1/2 tsp dried marjoram
- 1 1/2 tsp dried basil
- 2 tsp paprika
- 2 tbs Dijon-style mustard
- 1 cup (8oz, 240ml) tomato sauce
Instructions:
Heat oil in large nonstick skillet over medium-high heat. Add onion, carrot, celery, garlic and sauté until they start to get tender, about 8 minutes.
Remove and spread the vegetables on a plate to cool slightly.
In a large bowl lightly beat eggs.
Add crumbs, wine, ketchup, herbs paprika, mustard and mix well.
Add meat and mix.
Add half the vegetables and mix (because the veg are hot I add them slowly).
Add the rest of the vegetables and mix very well, kneading it like bread dough.
Put into a baking pan large enough to hold it easily, with room all around, and shape into a loaf.
Cover and bake at 375F (185C) for 45 minutes.
Remove and pour tomato sauce over the top.
Bake, uncovered, 15 minutes longer or until done.
Remove, let rest 5 – 10 minutes. Slice and serve.

You should.
Many of you know that I can’t be bothered to get out the heavy equipment to chop vegetables. I have a food processor, but it always seems like more work than it’s worth to get it out. Knives are just easier and quicker.
Except when I have veggies that need to be very finely chopped.
That’s when I get this out.
It’s so simple to use…. put the big chunks of veg into the base, pound the top a few times and Voila! Finely chopped vegetables.
Yeah, I know, food processors are easy to use, too. And if I had one sitting on my counter I might use it.
But I don’t…. This is compact, easy to use, easy to clean and mon mari doesn’t complain about washing it. (He’s the dishwasher.)
The boards are all up on the ceiling and it’s down to the trim.
All of those little bits and pieces that need to be measured and cut and fitted to cover up all of the seams and gaps.
And all of the trips up and down the stairs to his workshop in the barn and all of the trips up and down the ladder to fasten them to their spot on the ceiling.
He took a break from it all today and mowed the lawn.
