.%20I%20can't%20help%20myself...I%20love%20food,%20I%20adore%20cooking,%20just%20a%20title%20of%20a%20recipe%20makes%20my%20heart%20race.%3C/p%3E%3Cp%3EThe%20simplest%20of%20ingredients%20sets%20the%20mind-wheels%20spinning.%20What%20can%20I%20do%20with%20this%20pork%20loin?%20%20Hmmm,%20a%20top%20round%20roast,%20what%20unique%20meal%20can%20I%20make?%20So%20out%20comes%20the%20spices,%20the%20marinades%20concocted,%20vanilla%20beans%20slit,%20pine%20nuts%20toasted,%20coconut%20milk%20poured.%20A%20mad%20scientist%20has%20nothing%20over%20me!%20I%20see%20ground%20meat....I%20think%20Mexican.%20I%20buy%20lamb,%20I%20imagine%20Greek.%20Honey%20and%20pistachios,%20Turkish%20of%20course.%20And%20the%20list%20goes%20on.%20Yet,%20even%20with%20all%20this%20said,%20there%20are%20times,%20I%20look%20into%20a%20packed%20freezer,%20open%20up%20over-stuffed%20kitchen%20cabinets,%20and%20think,%20%22I%20have%20no%20clue%20what%20to%20cook%20tonight%22.%20It's%20not%20much%20different%20from%20a%20clothes-aholic%20looking%20into%20her%20jammed%20packed%20closet%20and%20thinking,%20%22I%20have%20nothing%20to%20wear.%22%20%20Oh,%20My.%3C/p%3E%3Cp%3EFrying%20cutlets%20in%20canola%20oilThis%20is%20when%20I%20have%20to%20chill%20out%20and%20get%20back%20to%20basics.%20With%20all%20the%20recipes%20to%20choose%20from,%20with%20all%20the%20meals%20I%20just%20have%20to%20try,%20I%20often%20forget...that%20sometimes%20Simple%20Is%20The%20Best.%20%20There%20is%20nothing%20more%20wonderful%20than%20a%20fat%20beefy%20hamburger.%20Nothing%20more%20scrumptious%20than%20a%20humble%20bowl%20of%20spaghetti%20and%20meatballs.%20And%20nothing%20more%20comforting%20than%20a%20supper%20of%20breaded%20chicken%20cutlets....plain%20and%20simple.%20It%20can%20be%20served%20with%20many%20different%20sides...rice,%20mac%20&%20cheese,%20buttered%20noodles%20sprinkled%20with%20parsley,%20mashed%20potatoes,%20baked%20sweet%20potatoes,%20whatever%20your%20heart%20desires.%3C/p%3E%3Cp%3EThis%20post%20is%20not%20written%20because%20I%20don't%20think%20you%20know%20how%20to%20fry%20up%20a%20good%20chicken%20cutlet.%20No,%20the%20reason%20for%20this%20post,%20is%20to%20remind%20us%20all%20of%20the%20simple%20foods%20we%20tend%20to%20forget--those%20much%20loved%20family%20favorites%20we%20overlook%20because%20we%20foodies%20are%20on%20a%20quest%20for%20the%20next%20%22blue-ribbon%22%20winner.%20It's%20the%20ordinary%20comfort%20foods%20that%20Grandma%20made,%20that%20Aunt%20Bess%20served%20every%20Wednesday%20eve,%20that%20we%20know%20are%20a%20hit%20every%20time,%20but%20just%20forgot.%20I'm%20here%20to%20remind%20you..and%20me.%20So%20dust%20off%20the%20top%20of%20that%20index%20box%20way%20up%20on%20that%20shelf,%20dig%20inside%20and%20pull%20out%20that%20Tried%20&%20True%20Treasure.%20%20It's%20time%20to%20go,%20Simple.Cutlets%20%22drain%22%20on%20paper%20towelsIf%20you're%20looking%20for%20an%20exact%20recipe,%20you%20won't%20find%20it%20here.%20This%20is%20not%20baking,%20it's%20cooking.%20So%20I%20hope%20this%20is%20close%20enough.%20Chicken%20Cutlets%20with%20mac%20&%20cheese%3C/p%3E%3Cp%3ETrim%20and%20pound%20chicken%20cutlets%20and%20set%20aside.%3C/p%3E%3Cp%3EPut%20canola%20oil%20in%20a%20wide%20skillet%20and%20heat.%20The%20oil%20must%20be%20hot%20so%20the%20cutlets%20don't%20absorb%20the%20oil%20and%20become%20greasy.%20When%20a%20few%20drops%20of%20water%20flicked%20into%20the%20oil%20begin%20to%20%22dance%22,%20the%20oil%20is%20hot.%3C/p%3E%3Cp%3EIn%20a%20flat%20dish,%20mix%20together%20bread%20crumbs%20(2%20cups%20to%20start),%20a%20hefty%20tablespoon%20of%20flour,%20salt,%20onion%20&%20garlic%20powders%20to%20taste.%20In%20a%20bowl,%20mix%20the%20two%20eggs%20and%20milk.%20Dip%20one%20cutlet%20into%20the%20egg%20mixture,%20then%20into%20the%20bread%20crumb%20mixture%20shaking%20off%20any%20excess.%20Place%20in%20hot%20oil.%20Repeat%20with%20a%20few%20more%20cutlets,%20but%20don't%20over%20crowd%20the%20skillet.%20Brown%20for%20about%203%20to%204%20minutes%20on%20each%20side.%20If%20the%20cutlets%20were%20pounded%20thin%20enough,%20it%20won't%20take%20long%20to%20cook%20through.%20Don't%20over-fry%20or%20the%20chicken%20will%20be%20dry.%20When%20fried%20to%20your%20liking,%20remove%20and%20place%20on%20paper%20towels.%20Cover%20with%20foil%20to%20keep%20warm.%3C/p%3E%3Cp%3EThat's%20it!%20Serve%20with%20any%20side%20dishes%20that%20please%20your%20family.%20Add%20tomatoes,%20lettuce%20and%20a%20swipe%20of%20mayonnaise%20to%20the%20leftovers%20for%20a%20great%20sandwich,%20put%20together%20a%20chicken%20parmigiana%20sandwich%20or%20dig%20out%20a%20recipe%20that%20you've%20wanted%20to%20try%20that%20calls%20for%20breaded%20cutlets.%20How%20simple%20can%20it%20get!%3C/p%3E%3Cp%3ERemember%20To%20Make%20Memories%20At%20The%20Table%3C/p%3E){kind=link}
