Simply Greek Mediterranean Couscous

A great couscous recipe with a Greek twist.

Ingredientes

  • 1 cup uncooked couscous
  • 2 cups cherry tomatoes (quartered)
  • 1/4 cup Kalamata olives (pitted and chopped)
  • 2 tsp dill
  • 1/2 Tbs Simply Greek Greek Salad Spice
  • 1/4 cup red onion (chopped)
  • 1 1/2 Tbs olive oil
  • 1/3 cup crumbled Feta
  • 3 Tbs lemon juice

Direcciones

  1. Bring 1 1/2 cups water to boil in medium saucepan.
  2. Add couscous and stir.
  3. Remove from heat; cover and let stand 5 minutes.
  4. Fluff with fork (see directions on box).
  5. In a mixing bowl, add lemon juice, dill and Simply Greek Salad Spice, while mixing rapidly add the oil in a slow steady stream.
  6. This will make a creamy dressing.
  7. Add red onions, tomatoes, feta and olives to the dressing.
  8. Blend dressing with the couscous.
  9. Serve while couscous is warm to hot.
