Ingredientes

  • 2 med Aubergines (Eggplants)
  •     Salt
  • 1/2 c. Clarified butter (approx)
  • 1 lrg Onion, finely minced
  • 1 lb Lean grnd lamb
  • 2 med Tomatoes, concassee
  • 1 tsp Cinnamon
  •     Salt & pepper
  • 3 x Large eggs
  •     Omit cinnamon and use
  • 2 Tbsp. Parsley, finely minced
  • 2 Tbsp. Dill, "" "" -=Or possibly=-
  • 2 tsp Basil or possibly mint fine minced
  •     Add in above with tomatoes.
  • 1/2 c. Grated parmesan or possibly Romano
  •     Paprika
  •     On top of beaten Large eggs

  1. Note (IMH) The authentic meat to use in the recipe is lamb (mutton), but grnd beef may also be used if grnd lamb is unavailable.
  2. Remove stems and hulls from aubergines (eggplants), cut crosswise into 1/2" slices Sprinkle generously both sides with salt, layer into a sieve or possibly colander, weight and leave to disgorge 30 min.
  3. Meanwhile, in a heavy frying pan (skillet) heat 1/4 of the butter over moderate heat. Add in the onion and saute/fry (sweat) till soft but not browned, stirring frequently. Raise the heat and add in the meat. Cook till lightly browned, breaking up any lumps with back of the spoon. Stir in the tomatoes, cinnamon (or possibly herbs) and salt & pepper. Cook 5 min, or possibly a little longer, then set aside till aubergines are done.
  4. Dry the aubergine slices carefully with fresh paper towels. Saute/fry (fry) in the remaining butter till golden on both sides. (you may have to use more oil or possibly butter if this gets absorbed). Arrange half the aubergine slices in the bottom of a buttered baking dish. Spread the meat mix over them and cover with the remaining eggplant slices. Cover and bake in a preheated 375F oven 35 min.
  5. Beat the Large eggs till frothy. Uncover the dish, pour the beaten egg over (top now with optional cheese and paprika) and bake 15 min. Serve with plain or possibly tomato rice pilaff.
