Sinampalukang manok is a sour soup dish made out of chicken, vegetables, tamarind and tamarind leaves, nearly similar to original sinigang except for the use of chicken and tamarind leaves. So for those who does not eat pork or beef this is the best way to enjoy a very popular Filipino dish “sinigang”, it’s sour, it’s warming, it good for the cold winter days, it nearly taste like chicken tom yam, but with less spice.

Sinampalukang Manok

1 kg chicken legs half head cabbage 1 bunch string green beans handful of tamarind leaves 2 stalks lemon grass, sliced 2 medium tomatoes, quartered 1 packet sinigang mix

1 onion, chopped fish sauce water

In a pot combine together chicken, tomatoes, tamarind leaves, lemon grass and onions; pour enough water to cover the chicken. Bring to a boil and simmer for 25 minutes. Add string beans, cabbage and sinigang mix and simmer for 5 minutes. Turn heat off, season with fish sauce if needed then serve. 3.2.2807
