It’s been a typical spring…. Warm sunny days followed by cool rainy days.

Which means that, however much mon mari wants all of the cooking to be moved outdoors, on cool, rainy nights we revert to winter cooking.

This is a simple skillet dinner – serve over rice, quinoa, or pasta.

Skillet Chicken with Peppers and Olives

Total time: 35 minutes

Ingredients:

Instructions:

Heat oil in large non-stick skillet over medium heat.

Add peppers, onion and sauté for 5 minutes.

Add chili powder, garlic,and sauté briefly.

Push vegetables to the sides of pan and add chicken. Sauté until chicken starts to brown.

Add tomatoes, chicken stock, bay leaves, cover and simmer 10 minutes.

Uncover and cook another 10 minutes, until pan juices start to thicken.

Remove bay leaves, stir in olives and serve.

I finished my spring chores today.

Well, the ones that can be finished as opposed to the ones that have to be repeated every week – like weeding and hoeing.

Last on my list was to turn off and defrost the vegetable freezer. I use it for all the produce from my garden. It’s empty on June 1st and packed to the gills by September 1st.

No point in having it on when it’s empty, so it gets turned off in the spring.

I opened the door and screamed.

The inside was covered with the most hideous, black spots.

My first thought was black mold.

In order for there to be mold it had to be warm.

In order for it to be warm it had to have quit working.

We just bought a new washer and our dryer is on its last leg.

I really didn’t want to have to buy a new freezer, too.

But is wasn’t warm, it was freezing cold.

Turns out, he, who shall remain nameless (if not blameless) put a can of cola in the freezer the other day.

And forgot about it.

It exploded.

He also forgot to tell me about it.

He said it was only a little explosion…..

On the one hand, the freezer was empty so I didn’t have a gazillion containers that had to be cleaned.

On the other hand, the freezer was empty so it got into all the coils on all the shelves.

On the third hand….. lots better than black mold.

And now it’s clean.
