This classic Mexican flavored dish brings me back to a time when I was in Middle School (must have been in the late 60's). My mother used to buy a boxed Tamale Pie Dinner (I can't remember the brand, though). I remember browning the beef, adding the spice mix and then adding water and egg to the cornmeal batter.
Now that I think about it, I don't think I've made a tamale pie since then! So, how could I remake this from scratch?On work week nights, I want to get dinner on the table as fast as I can. .%20My%20mother%20used%20to%20buy%20a%20boxed%20Tamale%20Pie%20Dinner%20(I%20can't%20remember%20the%20brand,%20though).%20I%20remember%20browning%20the%20beef,%20adding%20the%20spice%20mix%20and%20then%20adding%20water%20and%20egg%20to%20the%20cornmeal%20batter.%3C/p%3E%3Cp%3ENow%20that%20I%20think%20about%20it,%20I%20don't%20think%20I've%20made%20a%20tamale%20pie%20since%20then!%20%20So,%20how%20could%20I%20remake%20this%20from%20scratch?On%20work%20week%20nights,%20I%20want%20to%20get%20dinner%20on%20the%20table%20as%20fast%20as%20I%20can.%20%20If%20there%20are%20leftovers%20that%20reheat%20well%20in%20the%20microwave%20at%20my%20office,%20it's%20%20win-win.%20%20This%20recipe%20fits%20the%20bill.%20Fast.%20Easy.%20Good.%20Man-Pleasing.%3C/p%3E%3Cp%3EI%20re-read%20this%20cookbook,%20last%20weekend,%20and%20was%20surprised%20at%20how%20many%20recipes%20I've%20made.%20I've%20made%20their%20Skillet%20Chicken%20Broccoli%20&%20Pasta%20Dinner%20multiple%20times.%20In%20my%20book,%20America's%20Test%20Kitchen%20is%20up%20there%20with%20Ina%20Garten%20when%20it%20comes%20to%20recipes%20that%20are%20pretty%20much%20guaranteed%20to%20be%20good.%20%20I%20saw%20the%20Skillet%20Tamale%20Pie%20recipe,%20and%20realized%20that%20I%20had%20one%20pound%20of%20ground%20beef%20that%20I%20needed%20to%20either%20cook%20or%20freeze.%20Dinner%20was%20on!%3C/p%3E%3Cp%3EWe%20begin%20with%20chopped%20onion%20and%20chili%20powder.%20%20I%20added%20cumin,%20because%20I%20think%20it's%20what%20belongs%20in%20Mexican%20recipes.%3C/p%3E%3Cp%3EThe%20recipe%20lists%20chopped%20tomatoes,%20drained.%20I%20happened%20to%20have%20a%20can%20of%20Ro-Tel%20tomatoes,%20because%20I%20love%20to%20add%20mild%20green%20chilis.%20%20You%20need%20black%20beans,%20drained%20and%20minced%20garlic.%3C/p%3E%3Cp%3EOf%20course,%20you%20need%20ground%20beef.%20%20I'm%20thinking%20that%20turkey%20could%20work,%20too,%20but%20I%20haven't%20tried%20that%20yet.%20%20Brown%20the%20meat,%20then%20add%20the%20drained%20tomatoes%20and%20beans.%20%20I'm%20a%20believer%20in%20adding%20tomato%20paste%20to%20most%20of%20my%20braised%20or%20skillet%20recipes%20that%20includes%20tomatoes.%20%20I%20think%20it%20adds%20more%20depth%20of%20flavor.%20%20Whenever%20I%20open%20a%20can%20of%20tomato%20paste,%20I%20freeze%20portions%20for%20later%20use.%3C/p%3E%3Cp%3EI%20also%20decided%20to%20add%20some%20frozen%20corn,%20because%20black%20beans%20+%20corn%20=%20delicious%20combination.%20%20Last,%20grated%20cheddar%20cheese%20is%20added%20and%20cilantro.%20%20Hate%20cilantro?%20Really?%20Then%20use%20parsley.%3C/p%3E%3Cp%3EThe%20cornmeal%20topping%20is%20easy%20to%20make.%20You%20need%20flour,%20yellow%20cornmeal,%20buttermilk,%20egg%20and%20baking%20powder%20and%20baking%20soda%20and%20melted%20butter.%20%20Once%20the%20wet%20ingredients%20are%20whisked%20and%20added%20to%20the%20dry%20ingredients,%20just%20spread%20it%20evenly%20over%20the%20cooked%20filling.%20Bake%20at%20450%20degrees%20for%2010-15%20minutes,%20and%20serve.%3C/p%3E%3Cp%3EThe%20downside%20to%20daylight%20savings%20time%20is%20that%20shooting%20photos%20in%20natural%20light%20becomes%20a%20very%20slim%20margin.%20%20The%20photo%20is%20a%20bit%20darker%20than%20I'd%20like,%20but%20at%20least%20you%20can%20see%20that%20the%20filling%20held%20well.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20prep%20work%20for%20this%20recipe%20is%20very%20minimal,%20except%20for%20chopping%20an%20onion%20and%20mincing%20some%20garlic.%20%20Skillet%20dinners%20are%20perfect%20for%20a%20busy%20night,%20because%20I%20can%20clean%20up%20my%20mess%20while%20it's%20cooking/baking.%20%20Taste:%20%20My%20favorite%20part%20is%20the%20cornmeal%20crust.%20It's%20tender,%20and%20I%20think%20that%20buttermilk%20is%20the%20key%20ingredient.%20%20I%20have%20made%20some%20notes%20for%20the%20next%20time%20I%20make%20this--%20I%20will%20use%20my%20own%20Mexican%20Seasoning%20Blend%20(recipe%20card%20below),%20and%20a%20tablespoon%20of%20chopped%20chipotle%20peppers%20to%20kick%20it%20up%20the%20heat%20a%20lot%20more.%20%20If%20this%20is%20being%20made%20for%20kids,%20then%20maybe%20not.%20%20I%20would%20add%20another%20small%20can%20of%20diced%20green%20chilis,%20too%20and%20even%20more%20cheddar%20cheese--%20like%20double.%20This%20would%20be%20great%20with%20a%20dollop%20of%20sour%20cream.%20Overall,%20it's%20a%20comforting%20dish%20that%20did%20reheat,%20very%20well,%20for%20my%20lunch%20at%20work.%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20Internet%20Explorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E%3Cp%3Erecipe%20cards%20with%20Safari,%20Mozilla,%20Google%20Chrome%20and%20Internet%20Explorer.%3C/p%3E%3Cp%3EIf%20you%20still%20can't%20view%20the%20recipe%20card,%20all%20of%20my%20recipes%20are%20stored%20on%3C/p%3E){kind=link}
