%20%20:)%3C/p%3E%3Cp%3EA%20couple%20days%20ago%20I%20had%20a%20craving%20for%20Chinese%20food.%20%20And%20that%E2%80%99s%20actually%20pretty%20odd%20for%20me%20because%20I%E2%80%99m%20not%20really%20a%20fan%20of%20most%20Chinese%20dishes.%20%20But,%20I%20do%20LOVE%20the%20Pepper%20Chicken%20and%20Fried%20Rice%20at%20the%20Chinese%20restuarant%20here%20in%20town.%20So,%20I%20decided%20to%20try%20to%20make%20a%20%E2%80%9Cskinny%E2%80%9D%20version%20at%20home.%20%20%20My%20husband%20and%20I%20loved%20it,%20and%20my%2012%20year%20old%20son%20said%20it%20was%20%E2%80%9Cok%E2%80%9D.%20%20:)%20%20Boys.%20%20So%20uncommital.%20%20Today%20I%E2%80%99m%20sharing%20the%20Fried%20Rice%20recipe%20and%20tomorrow%20I%20will%20post%20the%20Pepper%20Chicken%20recipe.%20%20Ideally,%20you%20want%20to%20use%20%E2%80%9Cleftover%E2%80%9D%20rice%20that%20you%20made%20at%20least%20the%20day%20before%20and%20chilled%20overnight.%20%20I%20didn%E2%80%99t%20plan%20that%20far%20ahead%20however,%20so%20I%20just%20made%20my%20rice%20a%20few%20hours%20before%20dinner%20and%20let%20it%20chill%20until%20I%20was%20ready%20to%20prepare%20the%20rest%20of%20the%20dish.%20%20It%20worked%20out%20just%20fine.%3C/p%3E%3Cp%3ESkinny%20Vegetable%20Fried%20Rice%3C/p%3E%3Cp%3EHeat%20a%20wok%20or%20other%20heavy%20skillet%20over%20medium%20high%20heat.%20%20%20Add%20garlic%20and%20cook%20until%20tender.%20%20Add%20vegetables%20and%20cook%20several%20minutes,%20or%20until%20vegetables%20are%20crisp-tender.%20%20Add%20soy%20sauce%20and%20vinegar;%20stir%20well%20and%20cook%20for%20a%20couple%20minutes.%20%20Add%20rice,%20mixing%20well.%20%20Add%20chicken%20stock%20and%20cook%20just%20until%20rice%20is%20heated%20through.%20%20Season%20with%20salt%20and%20pepper,%20to%20taste.%3C/p%3E%3Cp%3EServes:%204%3C/p%3E%3Cp%3ECalories%20Per%20Serving:%20128%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
