Slippery Sam's Cowboy Chili

Ingredientes

  • 3 lb Lean hamburger meat
  • 1 Tbsp. Extra virgin olive oil
  • 2 med yellow onions,
  •     Finely minced
  • 2 x Jalapeno peppers, seeded
  •     And minced
  • 28 ounce Can, crushed tomatoes
  • 3 lrg Garlic cloves, minced fine
  • 1/4 c. Chili pwdr
  • 6 ounce Can, tomato paste
  • 1 c. Chicken stock
  • 4 ounce Can, green chilis, finely
  •     Minced
  • 1 Tbsp. Grnd cumin
  • 1 tsp Powdered red pepper
  • 1 tsp Sage
  • 1 tsp Cayenne pepper
  • 15 ounce Can, dark red kidney beans
  • 1 Tbsp. Cider vinegar

Direcciones

  1. In a large skillet, brown the beef and drain. In a large stockpot, heat the oil over medium high heat. Add in onion, peppers, and garlic and saute/fry till onion is translucent/soft. Add in the hamburger, crushed tomatoes, and tomato paste and stir well. Add in chicken stock, chili pwdr, and remaining spices and cook over medium heat till mix comes to a boil. Reduce the heat to low and simmer 30-35 min till chili thickens. Rinse kidney beans well and add in to the pot. (If desired your chili with a touch of fire, add in warm sauce or possibly crushed dry warm peppers at this point.) Return pot to medium-high heat and bring to a boil again. Remove pot from heat, let stand covered for about 10 min, and serve.
