Lunch Lady song…anyone? Hoagies and grinders….navy beans?

I was off of work yesterday, and pretty much worked on school assignments all dang day. I did have one happy break: an exercise date with my friend Elizabeth! We met up at Duke’s East Campus to do an easy three miles, or so I thought. Right away my hamstring let me know that it wasn’t joking on Wednesday, it was strained. So our three miles diminished to a mile and a half. And I have to admit, I was majorly bummed! The old me would have been thankful for an excuse to take a rest but I found my stride a few months ago…hopefully I won’t lose it in a week.

Since I had extra time after our date, I headed over to Whole Foods to see what sort of trouble I could get myself in to. Thankfully not too much, but I did get inspired when I noticed that one of my favorite pre-Celiac mixes was now gluten free!

And that’s how chili for supper turned in to sloppy joe’s!

One packet Simply Organic Sloppy Joe seasoning, one small onion chopped, one 6 ounce can of tomato paste, and one pound ground meat. I used ground lean sirloin.

I followed the directions on the back of the packet. Pretty simple, and 20 minutes later it was ready to go!

Served on an Udi’s Whole Grain gluten free bun with a big heaping side of Tak Soi (aka the most tender greens in the world!)

So how was this Sloppy Joe that I haven’t eaten in years?! Meh.

The flavor wasn’t all that strong…so it was a little bland. It was by no means terrible, but it wasn’t the best ever. I doubt I would use this seasoning mix again.
