%20and%20never%20gone%20without,%20but%20for%20some%20reason%20I%20have%20this%20anxiety%20that%20if%20I%20eat%20it%20all,%20I%20can%E2%80%99t%20get%20it%20again.%20Maybe%20it%20happened%20when%20I%20started%20taking%20this%20locavore%20thing%20so%20seriously.%20The%20realization%20that%20strawberries%20can%E2%80%99t%20grow%20year%20round%20in%20the%20northeast.%20I%20need%20to%20get%20my%20fill%20while%20they%E2%80%99re%20in%20season,%20preserve%20their%20flavors%20as%20best%20I%20can%20and%20hunker%20down%20for%20a%20round%209%20months%20without%20seeing%20them%20again.%20By%20the%20time%20strawberry%20season%20finishes,%20I%E2%80%99ve%20stuff%20myself%20so%20full%20I%20can%E2%80%99t%20imagine%20having%20even%20the%20smallest%20of%20berries.%20That%20lasts%20for%20about%20a%20month%20or%20so,%20then%20the%20cravings%20return%20with%20a%20vengeance.%20Preserving%20helps,%20knowing%20that%20I%20have%20fresh%20strawberry%20jam%20to%20last%20the%20winter%20puts%20me%20slightly%20at%20ease.%20Until%20it%20doesn%E2%80%99t.%20I%20only%20have%206%20jars%20to%20survive%20the%20winter%20(let%E2%80%99s%20forget%20about%20the%20other%20few%20dozen%20types%20of%20jam%20I%20also%20have%20stored%20up%20in%20my%20pantry).%20I%20panick.%20Will%20they%20really%20last?%20So%20I%20ration%20myself,%20allowing%20myself%20only%20a%20small%20spoonful%20of%20the%20sweet%20chunky%20jam%20every%20few%20weeks,%20determined%20to%20make%20my%20inventory%20last.%20Fast%20forward%209%20months%20later,%20as%20strawberries%20start%20to%20surface%20at%20the%20greenmarkets%20and%20I%20find%20myself%20still%20left%20with%204%20jars.%20I%E2%80%99ve%20rationed%20too%20well%20and%20find%20myself%20pushing%20jars%20of%20jam%20on%20everyone%20I%20know%20(thanks%20for%20holding%20the%20subway%20door%20for%20me;%20here,%20have%20some%20homemade%20jam)%20so%20I%20can%20start%20fresh%20in%20the%20new%20season.%3C/p%3E%3Cp%3EStrawberries%20aren%E2%80%99t%20the%20only%20culprit.%20I%20canned%20over%20a%20dozen%20quarts%20of%20apple%20sauce%20last%20fall%20and%20have%20barely%20touched%20them%20for%20fear%20that%20if%20one%20single%20jar%20is%20opened,%20the%20others%20will%20instantly%20be%20consumed.%20Butternut%20squash%20too.%20I%20roast,%20puree%20and%20freeze%20them.%20I%20have%20a%20small%20family%20sitting%20on%20my%20pantry%20shelf.%20Yet%20as%20the%20first%20days%20of%20spring%20arrive,%20I%20finally%20come%20to%20terms%20that%20winter%20squash%20season%20is%20coming%20to%20an%20end,%20and%20I%20need%20to%20consume%20the%20remains%20of%20last%20years%20harvest%20soon.%3C/p%3E%3Cp%3EAs%20bitter%20cold%20turns%20to%20bright%20sunny%20afternoons%20and%20chirping%20birds%20return%20to%20Brooklyn,%20soups%20become%20less%20of%20an%20option.%20I%E2%80%99ve%20never%20seen%20a%20recipe%20for%20chilled%20butternut%20soup,%20and%20my%20little%20experience%20with%20the%20idea%20(sampling%20a%20bite%20from%20leftovers%20chilling%20in%20the%20fridge)%20tells%20me%20it%20wouldn%E2%80%99t%20go%20over%20too%20well.%20But%20somehow%20light%20stews%20have%20the%20power%20to%20transcend%20seasons.%20Replace%20heavy%20cuts%20of%20beef%20and%20hearty%20root%20vegetables%20with%20bright%20colors%20and%20lighter%20flavors%20and%20a%20winter%20dish%20can%20easily%20earn%20its%20place%20in%20an%20spring%20menu.%20The%20addition%20of%20dried%20apricots%20add%20an%20almost%20tropical%20feel,%20making%20me%20wonder%20if%20I%20could%20even%20force%20this%20menu%20on%20a%20chilly%20summer%20eve.%20And%20the%20fact%20that%20recipe%20is%20crockpot%20friendly%20only%20increases%20its%20likeability.%3C/p%3E%3Cp%3EIn%20a%20medium%20skillet,%20heat%20olive%20oil%20over%20medium%20heat%20until%20it%20shines.%20Add%20onions%20and%20cook%20until%20softened,%20about%205%20minutes.%20Add%20garlic,%20ginger,%20cinnamon%20stick,%20spices,%20salt%20and%20pepper%20and%20mix%20well.%3C/p%3E%3Cp%3EAdd%20vegetable%20broth%20and%20orange%20juice%20and%20bring%20to%20a%20boil.%20Transfer%20to%20crockpot.%20Stir%20in%20squash,%20apples%20and%20apricots.%20Cook%20on%20low%20for%208%20hours,%20until%20vegetables%20are%20tender.%3C/p%3E%3Cp%3ERemove%20cinnamon%20stick%20from%20crockpot.%20In%20a%20medium%20saucepan%20bring%203%20cups%20of%20water%20to%20a%20boil.%20Add%20quinoa%20in%20a%20steady%20stream%20to%20prevent%20lumps%20from%20forming%20and%20return%20to%20a%20boil.%20Cover%20and%20reduce%20heat%20to%20a%20simmer%20and%20cook%20for%2015%20minutes,%20until%20all%20water%20is%20absorbed.%20Add%20quinoa%20to%20crockpot%20and%20stir%20well.%20Serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
