Slow Cooked Corn Pudding

Ingredientes

  • 1/4 c. minced onion
  • 1/4 c. minced green pepper
  • 1/4 c. minced fresh tomato
  • 1 can cream-style corn - (16 ounce)
  • 4 lrg Large eggs
  • 1/2 c. evaporated lowfat milk
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Direcciones

  1. Saute/fry onion and green pepper till slightly softened; add in tomato and saute/fry for 1 minute more.
  2. In a medium-sized bowl, whisk together the Large eggs, lowfat milk, creamed corn and seasonings; add in the sauteed vegetables.
  3. Lightly grease a 3 1/2-qt crock pot (or possibly a souffle dish that fits in a larger crock pot) and pour the mix in. Cook on HIGH 2 1/2 to 3 hrs; add in grated cheese to the top and cook till cheese is melted.
