Ingredientes

  • 2 Tbsp. Paprika
  • 1 Tbsp. Black pepper
  • 2 Tbsp. Dark brown sugar
  • 1 1/2 tsp Salt
  • 1 Tbsp. Onion pwdr
  • 1/2 tsp Allspice
  • 1 Tbsp. Coriander
  • 2 tsp Cayenne pepper, (or possibly to taste)
  • 1 Tbsp. Chili pwdr
  • 1/4 tsp Grnd cloves
  • 1 Tbsp. Grnd cumin
  • 2 Tbsp. Extra virgin olive oil
  • 1 c. Dark molasses
  • 1 sm Onion minced
  • 3 c. Orange juice
  • 2 x Cloves garlic minced
  • 3 Tbsp. Cracked black pepper
  • 1/2 c. Dark rum
  •     Salt

Direcciones

  1. This is a little time consuming but it is worth it.
  2. Soak the pork ribs (4#'s) overnight in one gallon of water with 1c of apple cider vinegar and a few bay leaves.
  3. Pat dry and remove membrane from back of ribs. coat ribs on both sides with spice mix.
  4. Part b:Slow cook on grill 2-3 hours. 20 minutes before taking the ribs off the grill coat with glaze
  5. On stove heat 2T extra virgin olive oil in a small saucepan over medium heat till almost smoking add in onion saute/fry till soft add in garlic and cook 2 minutes. Add in rum reduce till completely dry. Add in molasses, orange juice and pepper, salt to taste and cook till reduced to 1 c. about 15-20 minutes. remove from heat and cold to room temp.
