Ingredientes

  • 1 x London broil - (2 lbs)
  • 1 pkt taco seasoning mix - (1 1/4 ounce)
  •     Cooking spray
  • 1 c. minced onion
  • 1 Tbsp. white vinegar
  • 1 can minced green chiles - (4 1/2 ounce)
  • 1 can fat-free refried beans - (16 ounce)
  • 12 x fat-free flour tortillas - (8" dia)
  • 1 1/2 c. shredded Monterey Jack cheese - (6 ounce)
  • 1 1/2 c. minced plum tomato
  • 3/4 c. fat-free lowfat sour cream

Direcciones

  1. Trim fat from meat; rub seasoning mix over both sides of meat. Place meat in an electric slow cooker coated with cooking spray; add in onion, vinegar, and green chiles. Cover with lid; cook on LOW-heat setting for 9 hrs.
  2. Remove meat from slow cooker, reserving cooking liquid; shred meat with two forks. Combine meat and reserved cooking liquid; stir well.
  3. Hot beans and tortillas according to package directions. Spread 2 Tbsp. beans down the center of each tortilla. Spoon a heaping 1/3 c. meat mix on top of beans. Top each with 2 Tbsp. cheese, 2 Tbsp. tomato, and 1 Tbsp. lowfat sour cream; roll up.
