Slow Cooker Peach CobblerPeach cobbler is a summertime treat that can be made fuss-free in the slow cooker!
Who doesn't love a fruit cobbler, especially one made with peaches? But running the oven during stifling summer heat to make one often puts an end to the idea.
Serve this up with a scoop of ice cream!I'm always looking for ways to avoid using the oven during the summer and I mostly turn to my slow cooker to perform the oven's tasks.
The slow cooker produces an excellent-tasting cobbler! The fruit slowly cooks and infuses it's taste into the crumble mixture and vice versa.
Top will caramelize because of the dark brown sugarBrown sugar is called for here because of the great "caramel" taste it gives this dessert. The topping doesn't get dry and crisp, it's more caky and that seems to work very well.
You can change up the spices--I used cinnamon with a hint of nutmeg because I like those flavors with peaches, but many like allspice with peaches. Since allspice is rather strongly flavored, substitute 1/2 teaspoon of that for the 2 teaspoons of cinnamon if you want to do the substitution. You can leave in the nutmeg if you want, or eliminate it entirely.
Mellow and delicious peachesPlacing paper towels under the lid for the cook time is optional, but I strongly recommend it when baking in a crock pot. They will catch the condensation and your dessert won't get watery.
Slow Cooker Peach Cobbler
- 2 lbs peaches (firm but ripe)
- 1 tbs lemon juice
- 3/4 cup dark brown sugar
- 3/4 cup rolled oats (old-fashioned preferred)
- 3/4 cup flour
- 1/4 cup (1/2 stick) unsalted butter, cut in chunks
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- Pinch of kosher salt
Lightly spray the crock of a 5-6 quart slow cooker with non-stick spray.
Cut peaches in half and remove pit. Cut into 1/2-inch slices and place in a bowl. Sprinkle with lemon juice, toss, then set aside.
In a large bowl, combine the brown sugar, salt, oats, flour, baking powder and spices. Mix well.
Cut butter into flour mixture with a pastry blender or 2 knives until it resembles small peas.
Add peaches to flour mixture, mix well and turn into prepared crock pot.
Place a layer of paper towels under the lid to catch condensation.
Cook on low for about 3 hours, or until peaches are soft and oat mixture is brown.
Serves 6.
