This Slow Cooker Pulled Pork Taco Bar & Lemon White Bean Dip will score you a touchdown with friends and family. A little bonus, these are way lighter then traditional football eats, so go ahead and ENJOY!   You all know I’ve been working hard since the new year to eat a bit healthier and the great news is that getting together with friends and family for the big football game is no exception. I’ve got not one but two delicious recipes that are easy and are on the lighter side so you can stick to your resolutions! The Pulled Pork is out of this world good and there are just 3 ingredients- pork shoulder, Coke Zero and BBQ sauce! The toppers are gorgeous, flavorful and light too… guacamole, broccoli slaw and mango salsa. Lets not forget about the other recipe, Lemon White Bean Dip. Let me tell you, grab a RITZ Cracker and get to dunking, this stuff is addicting! Now you are #ReadyForKickoff my friends!  My family is getting together Sunday to watch our team so I headed out to Walmart to get everything I needed to make these awesome dishes. They’ve really got everything you need to throw a really fun and delicious get together! Sure chips and salsa are great but when it comes to my family getting together, the spread is a big deal! We’ve all been trying to eat a little lighter so I wanted to make sure to make flavorful dishes that everyone could enjoy. Lets start with this incredibly healthy and addicting Lemon White Bean Dip! Bean dips in general are a go to for me when i’m looking to make a healthy appetizer and this one in particular happens to be one of my favorites! Its creamy, garlicky and the brightness the lemon adds is really fantastic. A handful of ingredients get popped into a food processor, blended until creamy and thats it! Serve some buttery, crisp RITZ Crackers along side for a perfect combo. The Slow Cooker Pulled Pork is truly just as easy. Coke Zero, BBQ sauce and pork shoulder go into a slow cooker, cooked on low for 8 hours and the meat just falls apart it is so so tender!!! After the meat is pulled off the bone and allowed to sit in the juices, they get all absorbed into the meat and it is truly perfection! This pork really plays double duty, its incredible as a smaller appetizer served on top of the RITZ Crackers or turned into a meal with my taco bar. I served these with corn tortillas and I made three toppers that are absolutely on the lighter side. Fresh mango salsa, homemade guacamole and a simple broccoli slaw {broccoli slaw, mayo, lime juice, garlic powder, salt and pepper}. They each have incredible flavors going on and its fun so everyone can throw together their favorite combinations. ARE YOU #READYFORKICKOFF? WILL YOU BE WATCHING? WHAT ARE YOU MAKING? Print Slow Cooker Pulled Pork & Lemon White Bean Dip Author: Angela LeMoine   Ingredients FOR THE LEMON BEAN DIP: 2 cans cannellini beans, drained and rinsed 2-3 garlic cloves ½ cup loosely packed parsley leaves ¼ cup olive oil zest of 1 lemon juice of ½ a lemon 1½ tsp salt ¼ tsp pepper RITZ Crackers FOR THE SLOW COOKER PULLED PORK: 1- 4½ lb pork shoulder 1 bottle Coke Zero 1 cup BBQ sauce of your choice Instructions FOR THE LEMON BEAN DIP: Add the beans and garlic to a food processor. Pulse a few times to give these a head start. Add in the remaining ingredients and blend until smooth. I finish the dip off with just a small drizzle of olive oil and a garnish of parsley. Serve with RITZ Crackers. FOR THE SLOW COOKER PULLED PORK: Add the 3 ingredients to the slow cooker. Set on low for 8 hours. Using tongs, shred the meat and discard the bones. 3.5.3226
