Smashed Red Potatoes

Nice change from Idaho mashed potatoes.
Serve with Pork Cutlets Diane

Ingredientes

  • 1 pound red potatoes
  • 3/4 cup buttermilk, room temperature
  • 1 T unsalted butter
  • 2 T chopped, fresh parsley
  • 1 T chopped, fresh chives
  • salt and pepper to taste

Direcciones

  1. Boil potatoes in salted water for 20 minutes with skin on, until tender.
  2. Drain, then return to the pot and stir over low heat for 1 minute to evaporate excess moisture.
  3. Coarsely crush, ' smash' , the potatoes with a potatoe masher, then add the buttermilk and butter.
  4. Off heat, stir in the herbs, salt and pepper.
  5. NOTE:
  6. If you don't have any buttermilk...make your own using a teaspoon of vinegar in regular milk.
