Smoked Chicken Drumsticks With Mango Chutney

Ingredientes

  • 8 x Chicken drumsticks
  •     Flour
  •     Salt and pepper
  • 16 x Apricot halves
  • 2 Tbsp. Butter
  •     Oil
  • 125 ml Methylated spirits
  • 375 gm Green mangoes, peeled and sliced thin
  • 30 gm Seedless raisins
  • 50 gm Sugar
  • 125 ml Vinegar
  • 1/4 tsp Grnd ginger
  • 1/4 tsp Salt

Direcciones

  1. Flour the chicken in a mix of flour, salt and pepper. Seal them in a pan of warm oil, till they are lightly browned and well sealed. Place in smoker and smoke for about 6-7 min. Chicken will then have a smokey flavour but won't be totally cooked. Finish cooking in a 180*C oven.
  2. While waiting for chicken saute/fry apricot halves in butter and serve warm with chicken. Use chutney as an accompaniment.
  3. CHUTNEY: Sprinkle the mangoes with salt and place all ingredients in a large saucepan. Simmer uncovered till the chutney is thick. Pour into warm bottles and seal immediately.
