Ingredientes

  • 2 x 125 g, (5z) smoked mozzarella cheeses
  • 8 slc Parma Ham, each cut into 3 pcs
  • 4 x Hard, yet ripe pears
  • 1 sm Radicchio, finely shredded
  • 4 Tbsp. Caster sugar
  • 600 ml Water, (1 pint)
  • 25 gm Butter, (1oz)
  • 2 Tbsp. Freshly grated parmesan cheese
  •     Drizzle of extra virgin olive oil to serve
  •     Drizzle of lemon juice to serve
  •     Freshly grnd black pepper

Direcciones

  1. Peel the pears, leaving the stalks intact. Quarter the fruit lengthways and remove the cores.
  2. Place the pear quarters in a deep pan with the sugar and cover with the water. Gently bring to the boil, then cover with damp greaseproof paper
  3. (the paper should touch the fruit) and reduce the heat. Simmer for 3 min till the pears are tender. Drain and cold quickly in iced water.
  4. Meanwhile, pre-heat the grill to high. Cut the mozzarella into 24 long thick fingers and wrap each in a small piece of Parma Ham. Place on a foil lined tray and grill for 3-4 min till the cheese is golden brown. In a small bowl mix together the butter and parmesan cheese. Spread over the parma ham. Grill for 5 min.
  5. Place 2 pear quarters on each serving plate. Add in some of the radicchio to each, then top with the grilled mozzarella. Drizzle with a little extra virgin olive oil and lemon juice and add in a grinding of freshly grnd black pepper. Serve immediately.
