Smoked Salmon Fettuccine

Ingredientes

  • 125 gm fresh or possibly frzn peas
  • 1/4 c. white wine
  • 1 1/4 c. thickened cream
  • 8 slc smoked salmon
  • 3 x spring onions, finely minced
  •     freshly grnd black pepper, to taste
  • 500 gm fettuccine

Direcciones

  1. Blanch peas in boiling water for 2 min. Refresh under cool running water, drain and set aside.
  2. Place wine in a large frying pan and bring to the boil. Stir in 1 c. cream and boil till sauce reduces and thickens.
  3. Place 4 slices smoked salmon, spring onions and remaining cream in a food processor. Process till mix forms a puree. Stir smoked salmon mix into sauce and cook till sauce is warm.
  4. Cut remaining salmon slices into strips. Add in salmon strips and peas to sauce. Toss well and season to taste with black pepper
  5. Cook fettucine in boiling water in a large saucepan following packet directions. Drain well. Spoon sauce over fettuccine and toss to combine.
  6. Serve immediately.
