Smoked Salmon, Leek, And Dill Frittata

Ingredientes

  • 1 Tbsp. butter
  • 1 med leek, white and pale green parts only thinly sliced
  • 4 lrg Large eggs
  • 1 Tbsp. minced fresh dill
  • 1 ounce cream cheese cut pea-size pcs
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 ounce thinly-sliced smoked salmon or possibly lox cut thin strips

Direcciones

  1. Preheat broiler. Heat butter in medium nonstick ovenproof skillet over medium heat. Add in leek; cover and cook till tender, about 4 min.
  2. Whisk Large eggs and dill in medium bowl to blend; stir in cream cheese. Pour Large eggs over leek; sprinkle with salt and pepper. Reduce heat to medium-low. Cover and cook till edges are set but center is still runny, about 4 min.
  3. Scatter salmon over frittata. Broil till frittata is puffed and golden brown, about 1 minute. Cut frittata into 4 wedges. Place 2 wedges on each plate and serve.
  4. This recipe yields 2 servings;
  5. can be doubled by using 2 skillets.
  6. Comments: Of course, you must have toasted bagels with this. Spinach salad with apple cider dressing would be nice on the side, and hot cherry strudel is a fine finish.
