Ingredientes

  • 3/4 c. extra virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp Tabasco sauce
  • 1 tsp dry parsley
  • 1 tsp dry basil
  • 1 tsp dry thyme
  • 2 x cloves Caramelized Garlic (see recipe)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Juice of 1/2 lemon
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. dry white wine
  • 1 c. Grilling Vinaigrette (see above)
  • 1 Tbsp. minced fresh ginger
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1 lb tuna steak 1" thk
  • 1/2 c. hoisin sauce
  • 1/4 c. catsup
  • 2 Tbsp. soy sauce

Direcciones

  1. Grilling Vinaigrette: Mix well and allowed to sit at room temperature to enhance its flavor.
  2. Combine the Grilling Vinaigrette, ginger, soy sauce, and sesame oil in a non-reactive bowl. Add in the tuna steak and marinate for 1 hour in the refrigerator, turning the tuna once or possibly twice.
  3. Smoke the tuna for 45 to 50 min. Refrigerateto serve. Serve with dipping sauce.
  4. Dipping Sauce: Combine ingredients in a small bowl and mix well.
  5. Comments: Tuna is a good choice for smoking because it has a high fat content. It is especially tasty with an Oriental-style dipping sauce.
