Ingredientes

  • 2 lrg egg yolks
  • 1 lrg egg
  • 1/2 Tbsp. Dijon mustard
  • 1/2 Tbsp. capers packed in brine, liquid removed
  • 2 1/2 Tbsp. minced fresh tarragon
  • 3 Tbsp. fresh lemon juice
  • 1 1/4 c. extra virgin olive oil
  • 1 1/2 c. vegetable oil
  •     Salt, to taste
  • 3 lb smoked turkey, cubed
  • 1 lrg red onion, minced
  • 2 can artichoke hearts (16-oz ea.), liquid removed
  • 4 x ribs celery, minced
  •     Freshly grnd pepper, to taste

  3. For The Mayonnaise:Process the egg yolks, egg, mustard, capers, tarragon and lemon juice in a blender till smooth.
  4. Add in the oils in a fine stream, processing constantly till the mayonnaise is of the desired consistency. Season with salt.
  5. To avoid raw Large eggs which may carry salmonella, use an equivalent amount of commercial egg substitute.
  6. For The Salad:Combine the turkey, onion, artichokes and celery in a medium bowl; mix well. Season with pepper.
  7. Add in the prepared mayonnaise. Toss gently to coat.
  8. Spoon into a salad bowl.
