- For The Mayonnaise:Process the egg yolks, egg, mustard, capers, tarragon and lemon juice in a blender till smooth.
- Add in the oils in a fine stream, processing constantly till the mayonnaise is of the desired consistency. Season with salt.
- To avoid raw Large eggs which may carry salmonella, use an equivalent amount of commercial egg substitute.
- For The Salad:Combine the turkey, onion, artichokes and celery in a medium bowl; mix well. Season with pepper.
- Add in the prepared mayonnaise. Toss gently to coat.
- Spoon into a salad bowl.
