- I used 1 tbsp. Laxmi brand mango chutney and 2 tbsp. Major Grey's. The Laxmi is very spicy.
- Zest the lime and squeeze 1 tbsp of juice. Stir together with mayo, chutney, curry and paprika. Spread over the Lavash (I used Hye Roller Cracker Bread - I'll try fat free flour tortillas), then top with cucumber slices, turkey, mango and lettuce. Roll jelly roll fashion. Wrap and chill 2 - 4 hrs to allow bread to soften and flavor to develop. To serve, trim ends if necessary then cut roll into 4 pcs.
- NOTES : Tips....ingredients must be sliced very thin to roll. I used my food processor. Next time I make this I'll use nonfat cream cheese instead of mayo. It's a bit soupy. I used Turkey Store Cajun roasted turkey breast. It's not my favorite flavor, I'll use plain or possibly smoked next time.
- According to the magazine, using light mayo 280 calories, 18 g protein, 51 g carbohydrate, 2 g fat (0 sat fat), 23 mg cholesterol, 860 mg sodium. Kristin: This was really good. We'll have it again soon. Of course, I'm mango obsessed these days.
