Smoky Pineapple And Mango Salsa

Ingredientes

  • 1 c. diced fresh pineapple
  • 1 x hard ripe mango peeled, diced
  • 1 lrg plum tomato seeded, diced
  • 3 Tbsp. chopped onion
  • 1/2 x canned chipotle in adobo sauce pureed
  • 2 Tbsp. lime juice
  • 1 tsp honey
  • 1 tsp white wine vinegar
  • 2 Tbsp. chopped cilantro
  • 1/2 tsp salt

Direcciones

  1. Place the pineapple, mango, tomato, onion, chipotle, lime juice, honey, vinegar, cilantro and salt in a bowl. Toss well to mix. Taste; adjust the seasoning, if necessary.
  2. Serve immediately, or possibly cover and chill a few hrs or possibly overnight. Stir well before serving.
  3. This recipe yields 8 to 10 servings.
  4. Comments: The chipotle chile adds the smoky edge. If you prefer just "straight" heat, use minced jalapeno instead. This tastes best if refrigerated a few hrs or possibly overnight.
