Sometimes I think I think about food too much. And maybe I do. But if I do, so does the Omnivore.

We were eating lunch this weekend and I swear, only halfway through his roast beef sandwich, he was asking me what was for dinner. I’d like to think that it was because he was so thoroughly disgusted by his sandwich that he needed another meal to look forward to, but alas, that was not it.

He just loves food as much as I do. Not enough to go out and make the food we eat but enough to ask me what he’s going to be eating during the next meal. The answer was “sloppy joes” and he began fantasizing about meat laden loose meat sandwiches and I let him.

Bad me. I knew the moment I said “sloppy joes” that our future meal was in fact “snobby joes,” our favorite vegetarian substitute for your favorite cafeteria meal.

My husband wandered in to the kitchen when I finally got around to cooking and asked if he was lucky enough to have ground beef joes rather than ground turkey joes. He was only slightly disappointed when he saw that there wasn’t ground anything in dinner that night.

He insisted on eating two of these sandwiches for dinner, promptly launching himself into a food coma. He commented, almost obsessively, how delicious this meal was and how it had been so long since we last had it. He must have loved this meal more than his roast beef sandwich for lunch because he didn’t even ask me what we’d be eating for our next meal.

Snobby Joes ( adapted from Veganomicon)

Ingredients

Instructions

Bring 6 cups of water to a boil and add lentils that have been rinsed and picked through along with a bay leaf.

Boil 20 minutes or so, until lentils are tender. Drain.

Meanwhile, saute onion and garlic in a saucepan by heating a cooking pan coated with cooking spray over medium.

Add onions and cook 5 minutes before adding garlic and cooking until tender.

Add drained, boiled lentils.

Add spices and tomato sauce and simmer 10 minutes.

Cover and let stand for 10 minutes. Simmer a little more to reduce to the liquid if too soupy.
