Receta Snowed in Baking

The Vore and I were snowed in this past weekend. Well, not really, snowed-in. But snowed in for us. You see, we might have only got 2″ of snow but down here below the Mason Dixon line, life stops at the whisper of “Wintry Mix.” And that’s basically what we got: 2″ of freezing rain, topped with a few sprinkles of bona fide snow flakes, and glazed with a layer of rain that froze to the ground.

The whole mess just made for a crunchy, icy, mess that simply put cramp the Carnivores’ style. And when I say style I’m not referring to that handsome khaki overcoat she’s wearing, I’m referring to her inability to walk in this mess.

So. Yeah, we were snowed in. And what’s better to do when you are snowed in than bake? Nothing. That’s what I thought, too.

And…I actually was able to leave the house. I did, of course, go to the gym (to work-off the snowed in baking!) and I did a little holiday shopping.

But let’s pretend I was actually stranded without any eggs. But I’m craving chocolate chip cookies. Well, we all know better than that. The Omnivore is craving cookies. I have a solution.

According to the ‘Vore, they’re like a cross between a brownie and a cookie. They’re full of dense chocolate chip cookie goodness, and the edges are flaky and delicious. It is a great recipe for a cookie cake, if pressed into a round pan. These will be made again, even on non-snow days.

Preheat oven to 350*. Cream together two sticks of butter with brown sugar. Use the butter wrappers to grease a 9×13″ glass baking dish. Add vanilla extract, salt, and flour once butter is fluffy. Add chocolate chips and nuts. Using floured hands, press the dough into the baking dish. Bake 25 – 27 minutes or until golden. Let cool in the pan for 20 minutes then let cool on a wire rack before slicing.
