%3C/p%3E%3Cp%3ELast%20week,%20I%20was%20back%20at%20the%20farmer's%20market,%20and%20bought%20zucchini,%20cucumbers%20and%20these%20nifty%20little%20yellow%20peppers%20that%20look%20like%20a%20cross%20between%20a%20banana%20pepper%20and%20and%20a%20jalapeno.%20%20Then%20some%20friends%20of%20mine%20went%20off%20to%20England%20for%20a%20few%20weeks%20and%20asked%20me%20to%20pick%20vegetables%20while%20they%20were%20away,%20which%20I%20did.%20%20%20Sadly,%20the%20tomatoes%20were%20still%20too%20green%20to%20take%20home,%20though%20I%20nabbed%20a%20few%20eggplants.%20%20However,%20what%20my%20friends%20had%20was%20a%20preponderance%20of%20zucchini.%20%20There%20was%20so%20much%20zucchini,%20and%20the%20zucchini%20were%20so%20large,%20I%20found%20myself%20looking%20nervously%20around%20for%20Donald%20Sutherland%20and%20Brooke%20Adams.%20%20Seriously,%20do%20not%20fall%20asleep%20near%20a%20patch%20of%20zucchini.%20%20I%20am%20only%20half%20joking%20about%20this.%3C/p%3E%3Cp%3EAnyway,%20suddenly%20I%20had%20pounds%20and%20pounds%20of%20zucchini%20-%20I%20made%20a%20batch%20of%20zucchini%20bread,%20I%20shredded%20some%20up%20and%20mixed%20this%20into%20some%20turkey%20burgers%20along%20with%20an%20egg%20and%20a%20splash%20of%20Worcestershire%20Sauce%20(very%20similar%20to%20the%20turkey%20meatloaf%20I%20made%20a%20while%20ago)%20which%20was%20pretty%20good,%20but%20I%20still%20had%20about%205%201lb%20zucchini%20(ies?%20-%20how%20does%20one%20plural%20zucchini)%20to%20do%20something%20with%20and%20that%20was%20the%20moment%20I%20thought:%20pickle.%3C/p%3E%3Cp%3EWho%20doesn't%20love%20a%20pickle?%20%20And%20aren't%20zucchini%20rather%20close%20in%20essence%20to%20the%20ubiquitous%20cucumber?%20%20What's%20more,%20I%20have%20a%20new%20favorite%20cookbook,%20Simple%20Fresh%20Southern%20by%20the%20Lee%20Brothers%20which%20has%20a%20neat%20recipe%20for%20zucchini%20pickles%20and%20in%20the%20snacks%20and%20appetizers%20section.%3C/p%3E%3Cp%3EUsing%20their%20recipe%20as%20a%20base,%20I%20whipped%20up%20a%20batch%20of%20pickles,%20and%20have%20been%20obsessed%20with%20pickles%20ever%20since.%20%20So%20far%20I%20have%20pickled%20(Using%20the%20recipe%20below%20as%20a%20base%20for%20experimentation)%20the%20zucchini,%20cucumbers,%20onions,%20fresh%20cherry%20tomatoes%20(surprisingly%20wonderful)%20the%20yellow%20peppers%20and%20some%20radishes.%20%20I%20am%20NOT%20boiling%20jars%20and%20using%20sealing%20wax,%20however,%20so%20if%20you%20use%20my%20recipe,%20be%20aware%20that%20you%20should%20use%20up%20these%20pickles%20within%202%20or%20so%20weeks.%20%20Smith%20and%20I%20have%20been%20eating%20them%20at%20dinner,%20with%20a%20little%20swirl%20of%20this%20outstanding%20olive%20oil%20I%20picked%20up%20when%20we%20dropped%20Mads%20at%20camp.%20%20Amazing.%3C/p%3E%3Cp%3EPickles%3C/p%3E%3Cp%3EFirst,%20find%20yourself%20a%20pile%20of%20jars.%20%20I%20used%20old%20jam%20jars%20as%20well%20as%20a%20couple%20of%20pyrex%20bowls%20with%20lids.%20%20I%20am%20on%20the%20prowl%20for%20more%20jars,%20however.%20%20Any%20friends%20in%20my%20neighborhood%20interested%20in%20dropping%20empty%20glass%20jars%20with%20lids%20off%20at%20my%20house%20will%20receive%20pickles%20in%20return...%3C/p%3E%3Cp%3E1lb%20of%20zucchini%20(or%20cucumbers,%20or%20peppers%20or,%20well,%20whatever%20it%20is%20you%20want%20to%20pickle)%3C/p%3E%3Cp%3E1%20onion%20(or%20a%20couple%20of%20shallots,%20or%20a%20handful%20of%20green%20onions%20with%20the%20roots%20cut%20off,%20or%20sweet%20red%20spring%20onions%20-%20which%20will%20turn%20your%20pickles%20pink%20however)%3C/p%3E%3Cp%3EA%20handful%20of%20your%20hardier%20herbs:%20dill,%20or%20parsley%20or%20cilantro%20tough%20stems%20cut%20off%20(depending%20on%20what%20you%20think%20will%20taste%20good%20with%20what%20you%20are%20pickling)%20(P.S.%20basil%20just%20turns%20brown,%20don't%20use%20it%20I%20don't%20care%20how%20rampant%20your%20basil%20is%20in%20the%20back%20yard.%20%20It%20become%20unappealing%20over%20time%20in%20the%20vinegar)%3C/p%3E%3Cp%3ESlice%20your%20vegetables%20they%20way%20you%20want%20to%20eat%20them.%20%20The%20Lee%20Bros.%20like%20em%20sliced%20on%20the%20diagonal,%20but%20if%20your%20zucchini%20is%20the%20size%20of%20a%20T-ball%20bat,%20you%20might%20need%20to%20half%20it%20before%20cutting%20it%20on%20the%20diagonal.%20%20Cut%20any%20onions%20thickly.%20%20I%20didn't%20cut%20the%20tomatoes%20at%20all.%20%20OH%20-%20didn't%20use%20the%20lemon%20juice%20with%20the%20tomatoes,%20just%20used%20a%20whole%20cup%20of%20vinegar%20-%20but%20I%20think%20lemon%20juice%20would%20be%20fine.%20%20Shove%20your%20veggies%20in%20the%20jar.%3C/p%3E%3Cp%3EHeat%20the%20rest%20of%20the%20ingredients%20in%20a%20non-reactive%20sauce%20pot%20-%20and%20let%20it%20come%20to%20a%20simmer.%20%20When%20it%20is%20just%20simmering%20pour%20it%20all%20over%20the%20veggies%20in%20the%20jar.%20%20Let%20the%20jar%20sit%20open%20until%20it%20comes%20to%20room%20temperature,%20then%20seal%20it%20up%20and%20put%20it%20in%20the%20fridge.%20%20Finish%20off%20within%20two%20weeks.%3C/p%3E){kind=link}
