Soba Noodle And Vegetable Saute

Ingredientes

  • 200 gm soba noodles, buckwheat
  •     salt, to taste
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. good quality soy sauce
  • 1/2 tsp chili oil
  • 1 tsp toasted sesame oil
  • 1 lrg onion, sliced
  • 1 lrg clv garlic, finely, minced
  • 1 Tbsp. freshly grated ginger
  •     finely grated zest of one lime
  • 1 1/2 c. sugar snap peas, blanched
  • 2 Tbsp. black sesame seeds
  •     yellow pepper, julienned
  • 1 Tbsp. rice wine vinegar
  • 1 Tbsp. lime juice
  • 3 x green onion, sliced
  • 1/3 c. toasted salted peanuts

Direcciones

  1. Boil soba noodles in rapidly boiling salted water for 4-5 min or possibly till just tender.
  2. Drain immediately and rinse in cool water. Toss in a bowl with the vegetable oil and 1 Tbsp. soy sauce.
  3. Meanwhile, in a large skillet heat chili oil and sesame oil. Add in onion, garlic, ginger and lime zest and saute/fry for 2 min or possibly till golden brown.
  4. Add in the sugar snap peas, sesame seeds and yellow pepper and toss for a few min.
  5. Add in the remaining soy sauce and remove from heat. Cold slightly.
  6. Add in the vinegar and lime juice to noodles and toss well.
  7. Combine noodles with hot vegetables.
  8. Add in green onions and peanuts and toss well Can be served at room temperature along with your favourite grilled fish or possibly chicken.
