Receta Soft Sugar Free Jelly Sweets Recipe
When Tami set the challenge this month for I Made It I was really worried. Even though I have a sweet tooth, I am not a sweetie person. I love chocolate and when it comes to sweets the only thing I eat are jelly beans, wine gums and licourice. I have never tried a jube jube (as we call them here) so I have no idea as to what they taste like. I know they are fairly firm but the ones I made did not turn out quite like that. Sugar free candies are very difficult to make and I have little success in getting them right. But I was not going to let that fact affect me when it came to making jelly jubes and taking part in this challenge. I had intentions of rolling my jelly sweets in lavender scented fructose but as soon as I dipped them into the fructose they melted. It was quite weird watching that happen. All of this took place on the same day I was having a less than successful attempt at making my Freshly Blogged challenge and I nearly gave up. But a good night’s sleep and a fresh approach and I have a lime and basil infused soft sugar free jelly sweet to share with you. If I had the time I would have tried it once more, adding a little bit more gelatine to get a hard set – but that is a challenge for another time.
Soft Sugar Free Jelly Sweets Recipe
Ingredients:
- 10g sugar free jelly powder – I used lime flavour
- 250mls boiling water
- 10g powdered gelatine
- 200mls flavoured water – I infused mine with limes and basil leaves
- Desiccated coconut for rolling
Method:
Place the jelly powder into a jug and stir in the boiling water
Once the jelly has dissolved add the gelatine and stir
Once the gelatine has dissolved add the flavoured water
Pour into moulds or into a baking tin
Leave to set overnight in the fridge
Turn out the moulds or cut the jelly into shapes using a cookie cutter
Roll each sweet in the desiccated coconut
