Soto Kudus

Soto Kudus comes from a city calls KUDUS in Central Java. This Indonesian recipe is very easy to do. Basicly it's a chicken soup, but we put more spieses. We often call it SOTO, to make it different with soup. There are two types of SOTO, the clear soto and soto with coconut milk. Soto Kudus is one of clear Soto type

Ingredientes

  • 1 whole Chicken, cut into 2 – 4 pieces
  • 2 litre water for boil the chicken
  • 1 piece galangale, smashed it
  • 5 pcs bay-leaves
  • ½ tbsp pepper
  • 3 – 4 tbsp sweet soya sauce (kecap manis, the photo is attached)
  • Finely chopped :
  • 8 pcs small shallots, or half of big red onion
  • 4 pcs garlic clove
  • Serving ingredients
  • 200gr bean sprouts
  • 10 pcs chives
  • 3pcs green onion
  • 3 pcs celery
  • 3 hard-boiled eggs, cut it into 4 parts
  • Fried thin slices of garlic clove, and crumbs it
  • 1-2 pcs lime
  • Salt
  • Sambal (made from finely choped chillis, shallots and salt)

Direcciones

  1. Put the red onions and garlics on food processor and process it until finely chopped but not too smooth. Lightly fry it with 2 tbsp oil on frying pan. Stir it gently until the nice smell come out.
  2. Bring the water and chicken on a large saucepan, add the frying garlic, smashed galangal and bay-leaves, bring to the boil until the chicken become soft. Once the chicken become soft, takes it out from the sauce pan and drain it. Stripped the chicken and set aside.
  3. Bring to the boil the chicken soup, put salt, pepper and sweet soya sauce.

  5. Arrange in the bowl of bean sprouts, stripped chicken, green onion, chives and garlic crumbs. Pour the hot chicken soup. Add hard boiled eggs, celery, sambal and lime. Sambal is finely chopped of chillies, shallots and salt
