Sour Cream & Greek Yogurt Blueberry WafflesYou don't need buttermilk for these blueberry waffles! Surprise! They use sour cream and greek yogurt! Sunday breakfast at it's best.
Stumped for Sunday breakfast? Want waffles but you have no milk, let alone buttermilk? Here's your answer!
These waffles are made from scratch...no baking mix here! The great part is they don't require milk. If you have Greek yogurt, that's really all you need. You can use sour cream, but since Greek yogurt is a sour cream substitute, you can use all yogurt.
Try them for dessert too!I actually like them with the sour cream because the texture is slightly better; it's smoother and silkier. I use the regular variety of each, not the low-fat varieties, but I'm sure you can substitute those with no ill effects, but watch fat-free stuff--they will probably be way too sweet since you need some fat to temper the pure sweetness of the ingredients.
These taste great with good ole maple syrup, but they'd probably taste even better with a nice flavorful fruit syrup.
Maple syrup is good, but try a fruit syrup too!Even try these for dessert--topped with ice cream and fudge syrup. Waffles aren't only for breakfast!
Sour Cream & Greek Yogurt Blueberry Waffles
- 1/2 cup sour cream
- 1/2 cup plain greek yogurt
- 1 cup water
- 2 tbs sugar
- 2 eggs
- 1 tsp vanilla
- 1/4 tsp white vinegar
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh or frozen blueberries (if using frozen, don't thaw)
In a large bowl, whisk sour cream, yogurt, water, sugar, eggs, vanilla and vinegar.
In another bowl, mix the flour, baking powder, baking soda and salt.
Add the flour mixture to the sour cream mixture and whisk until smooth.
Preheat waffle maker. Add batter as per manufacturer's instructions. Top the batter with 1/4 cup (approximate) of blueberries. Close top of waffle maker and proceed as per waffle maker's instructions. Generally, when the steam stops is when the waffle is done, but best to follow your waffle iron's instructions.
Dust with powdered sugar if desired. Serve with butter and syrup of choice.
Makes about 4 large waffles (that is what I got and I use one of those flip-style Belgian waffle makers.
