Sour Cream Sweet Potato Pie

Ingredientes

  • 3 c. cooked, mashed sweet potatoes
  • 1 c. sugar
  • 2 lg. Large eggs
  • 2/3 c. lowfat sour cream
  • 1 teaspoon vanilla
  • 1/3 stick butter
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • Salt (healthy pinch)

Direcciones

  1. Separate egg yolks from whites. Mix all ingredients together, reserving egg whites for meringue. Put ingredients into DEEP DISH pie shell and bake at 350 degrees till ALMOST done (approximately 1 hour). Remove from oven and top with meringue made from egg whites. Return to oven (approximately 15 to 20 min at 350 degrees) and cook till meringue is brown. Cold and serve.
