Sourdough Surprises: Quick Breads~
Banana Chocolate Chip Sourdough Bread~
Have you ever decided to bake something and from the minute you start, you knew it's going to be a disaster! Well, that was the case this month when I decided to make Banana Chocolate Chip Sourdough Bread for this months challenge. First, my starter seemed "off" meaning it just didn't seem as active as usual, Second, I thought I had banana's in my freezer, nope, had to use the not ripe enough yet banana's, and....Third, I have 4-9 x 5 loaf pans and 4-8 x 4 loaf pans, but I forgot that I borrowed all of them to my neighbor lady, so she could make zucchini bread for her church bake sale~ So....that is why for the quick bread challenge, I made muffins! I was thrilled I even had muffin liners! The muffins were excellent and I have made this bread recipe before, so I know the bread is also excellent:) Next time, I'll make sure I have everything I need, before I start!
- 1 cup fed sourdough starter
- 2/3 cup oil
- 3 eggs
- 1 t vanilla extract
- 2-3 medium banana's, mashed
- 2 cups flour
- 1 cup sugar
- 2 t cinnamon
- 2 t baking powder
- 1-1/2 t baking soda
- 1 t salt
- 1 cup chocolate chips
Combine the starter, oil, eggs and vanilla in a medium bowl. Mix well. Stir in mashed banana's. Combine the dry ingredients in a separate bowl, then stir into wet mixture. Fold in chocolate chips. Spoon into a greased and floured 9 x 5 loaf pan. Bake at 350 for 45-50 minutes. Let cool in pan for 10 minutes. Remove from pan and cool on wire rack.
