South Carolina Peanut Butter Silk Pie

Ingredientes

  •     Filling:
  • 1 pkt cream cheese (8 ounce.) softened
  • 1 c. sugar
  • 1 c. creamy peanut butter
  • 1 Tbsp. melted butter or possibly margarine
  • 1 tsp vanilla extract
  • 1 c. heavy cream beaten till stiff Crust:
  • 1 x prepared chocolate cookie-crumb crust (9") Topping:
  • 1 c. semisweet chocolate chips
  • 3 Tbsp. brewed coffee
  •     minced peanuts for garnish

Direcciones

  1. To make filling, beat cream cheese, sugar, peanut butter, butter and vanilla in large mixing bowl till creamy. Gently mix in half the beaten cream, then mix in remaining cream till blended. Spread filling in crust; smooth top.
  2. To make topping, combine chocolate chips and coffee in microwave-proof bowl. Cover with plastic wrap. Microwave on high 1 to 2 min; stir till smooth. Cold chocolate slightly, then pour over top of filling. Chill pie 1 hour till chocolate is hard, then cover loosely and chill overnight. Sprinkle with minced peanuts, if you like.
  3. Makes 8 servings.
