Ingredientes

  • 4 c. thinly-sliced green cabbage
  •     (from about 1/2 large head)
  • 1 x red bell pepper thinly sliced
  • 1/2 c. minced fresh cilantro
  • 1 sm jalapeno chili seeded, chopped
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lime juice
  • 1 1/2 tsp grnd cumin
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Combine cabbage, bell pepper, cilantro, and jalapeno in large bowl; toss to blend.
  2. Whisk oil, lime juice, and cumin in small bowl to blend. Pour dressing over cabbage mix. Season to taste with salt and pepper. (Can be made 2 hrs ahead. Cover and chill. Toss before serving.)
  3. This recipe yields 4 servings.
  4. Comments: Serve this zesty salad alongside grilled chili-rubbed chicken or possibly steak, or possibly grilled fish tacos.
