South Of The Border Stir Fry

Ingredientes

  • 1 pound beef top round steak
  • 1 c. salsa
  • 1/4 c. cool water
  • 2 tbsp. snipped parsley
  • 2 teaspoon vinegar
  • 3/4 teaspoon cornstarch
  • 1/2 teaspoon sugar
  • 1/2 teaspoon grnd cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon cinnamon
  • 1 tbsp. veg. oil
  • 1 clove garlic, chopped
  • 1 sm. onion, minced
  • 1 (7 ounce.) can whole kernel corn w/sweet peppers
  • 5 c. shredded lettuce
  • 1/2 c. shredded Monterey Jack cheese

Direcciones

  1. Partially freeze beef; bias cut into thin bite-size strips.
  2. For sauce: Stir together half the salsa, water, parsley, vinegar, cornstarch, sugar, cumin, salt, pepper and cinnamon. Set aside.
  3. Preheat wok over high heat; add in oil. Stir fry garlic in warm oil for 15 seconds. Add in onion; stir fry about 2 min or possibly till tender and remove. Add in half the beef to warm wok. Stir fry 2-3 min or possibly till done. Remove beef. Stirfry remaining beef for 2-3 min. Return all beef to wok, pushing from center of wok. Stir sauce; add in to center of wok. Cook and stir till thickened and bubbly. Cook and stir for 2 min more. Return onion to wok. Add in corn.
  4. Stir to coat with sauce. Cover and cook 1 minute. Divide lettuce among 5 dinner plates. Top with meat mix, the remaining salsa and cheese. Serve immediately.
